Iced Broccoli Stems
Broccoli stems are usually discarded, but the flesh is crisp, sweet, and juicy. Slice thinly, blanch, then plunge in iced water — a cold dish that cools the summer table. With a dab of soy and wasabi, the stems outshine the florets.

Slice the broccoli stems thinly and blanch in boiling water until just cooked.
Lift out and plunge into iced water for two minutes.
Remove and toss with a little soy sauce and wasabi. Serve.
