Traditional French Rillettes

The pork left in a soup pot is often thrown away, but shred it finely, fold through mayonnaise with aromatics, and you have French rillettes — spread on toast, a country-house staple across France for a hundred years.

  1. Finely chop the garlic and shallot. In a frying pan, heat olive oil and fry the garlic and shallot until fragrant. Add the pork and stir-fry together for a few minutes.

  2. Transfer all the cooked ingredients to a blender and, working gradually, blend in the mayonnaise until smooth.

  3. Remove the pork paste and season with salt and pepper. Serve with toast or biscuits.
